Quinoa Taco Casserole

One of our family favorites! Loved by kids and adults alike.

What you need

1 lb chicken, ground

1/2 onion, chopped

2 cloves garlic, chopped

1 red bell pepper, chopped

1 15 oz can black beans

1 cup uncooked quinoa, cooked

1 green onion, chopped

1-2 tbsp cilantro, chopped

8 oz salsa (half of the 16oz jars)

1/2 cup of cheese, shredded with some extra for topping

1 avocado, sliced

1/2 cup plain yogurt

1. Cook a pot of quinoa (1 cup dry quinoa to 2 cups water)

2. Brown chicken, onion and garlic in pan

3. Put cooked quinoa, chicken, onion and garlic into casserole dish

4. Add bell pepper, black beans, green onion, cilantro, salsa and 1/2 cup of cheese, mix until combined

5. Sprinkle remaining cheese on top

6. Place in oven for 5 minutes at 375F until cheese melts

7. Serve with avocado and a dollop of plain yogurt
