Freezer Burritos and PB Rolls | Food Prep Series

Two recipes that can be thrown together quickly and can be frozen for later. We use the frozen burritos for Jon's lunches if we didn’t have leftovers the night before or as a dinner when Christmas shopping and wrapping run long and energy is depleted. We use the peanut butter and honey rolls as a quick breakfast if we're running out the door or as a snack for our outings at the park.
Burrito
1-2 lbs ground turkey
1 can black beans
1 can kidney beans
Spices (chili powder, onion powder, garlic powder, cumin, oregano, salt, pepper, cayenne pepper- if you like it spicy)
10-15 whole wheat tortillas
Shredded cheese
Salsa
Brown meat in fry pan
Transfer meat to bowl, add beans and spices of choice, mix until combined. (I use a kitchenaid mixer which breaks the beans down. I like the thicker consistency. You can use a potato masher to get that same effect if you don’t have a kitchenaid mixer)
Place about 1/3 cup of meat mixture on tortilla, top with cheese and salsa (spinach also freezes well). Roll up into a burrito. Place in a ziplock bag and put in the freezer.
To thaw, take out of ziplock bag and microwave for 1 minute on each side.






Peanut butter and honey rolls
Natural peanut butter (no added salt or sugar)
Honey or agave nectar
Tortillas
Cut round tortilla in half (to make two rolls)
Spread peanut butter all over one half, then drizzle on some honey
Starting at the straight edge, roll tightly
Cut the roll in two and place in snack ziplock bags
Place in freezer until ready to enjoy (my girls eat them straight out of the freezer)
