Tuna Salad with Edamame

What you will need:

2 cups cooked whole wheat pasta (bow tie, shells or other)

1 cup cooked edamame (I use frozen "steam'ables edamame shelled soybeans")

8 oz pouch albacore tuna (or 2, 4 oz cans of tuna in water if limiting consumption of albacore, ex. if pregnant)

1/2 cup carrots, shredded

1/4 cup hummus

1/4 cup organic mayonnaise

2 Tbsp olive oil

2 Tbsp lemon juice

Dash of salt and pepper

Method

1. Mix cooked pasta, edamame, tuna and carrots in bowl

2. In a separate bowl, mix hummus, mayonnaise, olive oil, lemon juice, salt, and pepper

3. Pour the sauce over the pasta mixture and combine to incorporate all the flavors
