Slow Cooker Barley Stew

With it's easy assembly and nutrient dense ingredients, you can't go wrong trying this stew on a chilly night. Barley is a very nutritious grain that contains soluble fiber that helps lower "bad" blood cholesterol. I have been using a quick barley which is a little less nutritious than whole grain or hulled barley because of the processing involved, however it only takes 10 minutes to prepare which is what we need on a busy night! I hope you enjoy this recipe!

Ingredient List

1 chicken bouillon cube

3 cups hot water

(If you have chicken stock, use 3 cups)

1.5lbs lean ground turkey

1 onion, chopped

Non- stick spray

2 medium sweet potatoes, peeled, cubed

3 celery stalks, roughly chopped

5 carrots, roughly chopped

½ 15 oz can tomato sauce

1 cup spinach, chopped

1 cup dried quick barley, prepared

  1. Brown ground meat and onion in sauté pan

  2. Dissolve 1 chicken bouillon cube in hot water in slow cooker, then add browned meat and cooked onion, sweet potatoes, celery, carrots, tomato sauce and spinach

  3. Cook for 4 hours on high, or 6 hours on low

  4. Prepare quick barley on stovetop and add it to stew when ready to serve
