Apple Carrot Oatmeal Cookies

These healthy cookies can be a quick breakfast or a perfect snack for school lunches, being nut free. The autumn inspired produce and spices used in the cookies add wonderful flavor. They are packed with fiber and the hidden carrots give them extra nutrition for the whole family. These don't last long in our house, parent and kiddo approved!

You will need:
1 cup oats, instant
½ cup whole wheat flour
¼ cup flaxseed, ground
1 tsp baking powder
1 tsp cinnamon, ground
½ tsp ginger, ground
1/8 tsp salt
2 Tbsp olive oil
1 egg
1 tsp vanilla
¼ cup agave nectar
2 small apples, shredded
1 small carrot, shredded
*servings: 24 small cookies
1. Preheat oven to 325F
2. Mix oats, whole wheat flour, flaxseed,
baking powder, cinnamon, ginger, and
salt in a bowl
3. In another bowl, mix olive oil, egg,
vanilla, agave, apples, and carrot
4. Add wet ingredients to dry and stir
5. Shape balls and place on lined cookie
sheet
6. Bake for 12- 15 minutes
