Egg Muffins

These egg muffins can be made fresh to serve or in advance to freeze or keep in the fridge. Here is how we make them in our house!

What you need
10 eggs, beaten
12 pieces of cold cut chicken or turkey (look for nitrite, preservative- free)
1 roma tomato, chopped
1/3- 1/2 cup cheese, shredded
1/3 cup mushrooms, chopped
1/3 cup spinach, chopped
1/3 cup onion, chopped
1/3 cup red pepper, chooped
1. Preheat oven to 375F
2. Spray a muffin pan with non- stick spray
3. Line each cup with a cold cut
4. Pour in eggs
5. Stir fry mushrooms, spinach, onion, and red pepper
5. Customize each cup with the ingredients you like
6. Bake at 375F for 20 minutes
