Two Bean Vegan Patties

A delicious marriage of chickpeas and blackbeans in these yummy patties. A friend of mine made vegan patties with a touch of lime for her daughter's 4th birthday party. She was kind enough to share the recipe with us. After some requests, here is our version of her recipe!

1 can chickpeas, rinsed and drained

1 can blackbeans, rinsed and drained

4 carrots, peeled and grated

1/2 onion, chopped into small pieces

1/2 cup old fashioned oats

1/4 cup chopped cilantro

3 cloves garlic, chopped

1 Tbsp chili powder

dash of salt and pepper

Buns (we use Sandwich Thins)

Garnishes (honey mustard)

1. Place all ingredients in a food processor. Alternate between pulsing and mixing with a spoon until mixture is sticky enough to make into patties but still has full beans. Do NOT puree!

2. Shape into patties

3. Coat fry pan with olive oil and cook over medium- high heat, 2-3 minutes each side

4. Serve with thin buns and mustard
