Meaty Stuffed Zucchini and Squash

You will need:
1 cup brown rice
1 lb. ground 93% lean ground beef
4 zucchinis, medium size
4 squashes, medium size
2 garlic cloves, minced
1 onion, minced
2 Tbsp. parsley, coarsely chopped
1 cup of tomato, diced
1 can tomato paste 6oz.
1 tsp. pepper
½ tsp. salt
1 Tbsp. olive oil
1/8 cup water
¼ cup of shredded parmesan plus 2 Tbsp. for garnish
Servings: 4
In a bowl add beef, rice, ½ can tomato paste, 1/8 water, olive oil, tomato, salt, garlic , onion and pepper
Cut zucchini and squash in half along the width and with a tsp. start taking the insides out
Stuff the zucchini and squash with the rice and beef mixture
In a large pot place the stuffed zucchini, stuffed squash and remaining tomato paste
Add water to the pot until it covers the zucchini and squash, cook on medium heat for about 40 to 50 minutes
Garnish with the 2 Tbsp. of cheese
