I know these probably don't sound delicious, but I promise you they are!! With so many black bean brownie recipes floating around the internet, Addie and I decided to make our own version! Surprisingly decadent and nutritious, these brownies have been our desert choice every day last week. Easy and fast to make too! Please give them a try and let us know what you think!
You will need:
1 cup dates, pitted
1 tsp vanilla
¼ cup peanut butter, natural, unsweetened and unsalted
1 15 oz can black beans, drained and rinsed
1 Tbsp coconut oil
½ cup cocoa powder
½ tsp baking powder
1-2 Tbsp water
1 Tbsp dark chocolate chips, crushed in baggie (omit for vegan option)
*servings: 16
Preheat oven to 350F
Blend dates, vanilla, and peanut butter in food processor until smooth
Add black beans, coconut oil, cocoa powder, and baking powder to date mixture in food processor and add in water until mixture is smooth (1-2 Tbsp)
Line an 8x8 baking pan with foil or non-stick spray and transfer brownie mixture to pan
Flatten out mixture and sprinkle crushed chocolate on top
Bake on middle rack for 23-25 minutes
The unexpected star in this brownie recipe: The Black Bean
- great source of vegetable protein
- high in insoluble fiber, which can reduce cholesterol
- high magnesium content, excellent for people at risk of developing or suffering from heart disease
- rich in antioxidant compounds called anthocyanins, that help prevent cancer and blood clots
- excellent source of minerals and folate (a water soluble B vitamin)
